Cremini mushrooms are really pretty cool. They have a browner mushroom color, firmer texture, and better flavor than the younger white mushrooms but are less aged and more practical than the portobello mushroom. Their flavor is a little more "earthy," and I love them. These are my favorites to saute (think butter, white wine, and chives), but when you pickle them using HomeBrew Quick Pickle Mix, look out. They are simply delicious.
I don't know if you can see this phenomenon in the photo, but the mushroom is a VERY thirsty veggie. I crammed the pint jar full of sliced mushrooms and actually wound up with about 1/2 the jar of actual pickled mushrooms. Surprisingly, they hold their firmness pretty well; look spectacular as a side dish; and create an INCREDIBLE surprise on a bacon & mushroom cheeseburger. You're welcome!
